If I want boneless chops, can I get baby back ribs and pork tenderloin?
Yes, with boneless chops, you’ll get both. If you choose bone-in chops, you will not get baby back ribs or pork tenderloin.

Can I get half the belly fresh and half the belly into bacon?
Yes, but only if you are ordering a full pig. If you order a half pig, you will need to choose between fresh or bacon.

Can I get ham steaks and half a ham?
Yes and no. If you want ham steaks and ham, you will get 2 ham steaks and 2 ham portions. The ham portions aren’t quite half a ham, but they are very close.

Can I get any flavor of bacon that you carry in-store?
No, we only offer our traditional hickory bacon for pig processing orders. You can choose thin, regular, or thick-cut bacon.

What’s the difference between spare ribs and baby back ribs?
Baby back ribs come from the top of the rib cage near the backbone. They are leaner and meatier. Spare ribs are from the bottom of the rib cage, closer to the belly.

Why can’t I get T-bones and NY strips or porterhouses and filets?
When looking at a T-bone or porterhouse steak, you see the distinct T-shaped bone. The larger chunk of meat on one side of the bone is the NY strip, and the smaller chunk on the other side is the filet.

Why can’t I get NY strips and filets when ordering a ¼ beef?
We require T-bones and porterhouses with a ¼ beef order to ensure that you get very nice steaks.

What’s the difference between a rib steak and a ribeye?
They are the same cut. A ribeye is boneless, whereas the rib steak has the bone in it. The same goes for the standing rib roast (bone-in) and rolled rib roast (boneless).

How long after I order will I be able to pick it up?
Depending on when the beef came in for slaughter and how many standing custom processing orders we currently have, you should expect around 2 weeks on average. Beef hangs in our cooler for a minimum of 10 days to ensure optimal flavor.

Will my meat be kept separate?
No, we batch all venison together. If you bring in trim from something other than a deer, then yes, we will keep that separate from everything else.

How long after I bring in the trim will I get my order back?
We do not start processing any wild game until after the first of the year, regardless of when you bring yours in. We are a USDA-certified facility and cannot process wild game at the same time as our USDA-certified custom processing orders (pork and beef). We start processing after the holiday orders are completed.

Do you accept full carcasses?
No, we do not accept full carcasses. All wild game meat must be brought down to trim, free of any hair and bones, and in clear bags. It does not need to be frozen when brought in because it goes straight to our freezer with your name and order ID number on it.

Can I come get my wild game meat after I’ve already dropped it off?
Yes, you can absolutely come get the meat back after you drop it off, as long as you pick it up before the first of the year. After the first of the year, we may have already started making products, and your meat may have been processed.

What happens to my deposit if I pick up my meat after I already placed my order?
Your deposit will be refunded if you decide to pick up your unprocessed meat.

Can I request a product that’s not on the order form?
Yes, you can make a special request, but it’s not guaranteed that we will be able to fulfill it. There are certain requirements for custom products not on the order form. These requests will be processed when time allows, depending on the product, and may be handled after standard orders are completed.
